2009 Cypress Vineyards Cabernet Sauvignon

The ocean’s influence on the Central Coast winegrowing region is significant – keeping coastal and inland valleys refreshingly cool at night, while preserving the grape’s natural acidity. For Cypress Vineyards Cabernet Sauvignon, the 2007 harvest demonstrated absolutely ideal growing conditions. Sparse winter rainfall, followed by a moderately warm spring and summer produced exceptional Cabernet Sauvignon with ripe, pure varietal fruit flavors. Winemaker's Comments
 

The 2009 Cypress Vineyards Cabernet presents dark purple in the glass with youthful red hues. An attractive mix of ripe red fruits, black cherries, black currants and violets describe the aroma, along with a bouquet of spicy cedar cigar box. The palate is soft and rich with a mouthful of varietal Cabernet fruitiness from start to finish.  A Cabernet serious enough for the connoisseur, yet quaffable for anyone who enjoys a good glass of red wine, the 2009 Cypress Vineyard Cabernet Sauvignon would be the perfect pairing for a roasted leg of lamb, or osso bucco.  This wine should be enjoyed in its youth or cellared up to five years.

2009 Cypress Vineyards White Zinfandel

The windswept Cypress tree, the unmistakable signature plant of California’s coastal terrain, owes its gnarled appearance to the maritime air’s persistent movement either inland or seaward.  The ocean’s influence on the Central Coast winegrowing region is significant, keeping coastal and inland valleys refreshing cool, while preserving the grape’s natural acidity and flavor. Temperature is critical for development of fragrance, flavor and acidity – too little heat, and grapes rarely ripen, too much and the acidity, delicate and endearing qualities of the grape are lost.  For Cypress Vineyards White Zinfandel, the daily cooling air from the Pacific moves directly from Monterey Bay and down the Monterey appellations of the Salinas Valley, creating a White Zinfandel with delicate raspberry, strawberry and watermelon aromas and flavors matched with a crisp acidity.  Harvesting and pressing in the vineyard at night ensures the preservation of these bright fruit flavors.

ARIEL Non-Alcoholic Brut Cuvée

ARIEL Brut Cuvée is produced from Chardonnay grapes fermented cold (45° F, 7° C) in stainless steel cooperage. The cuvée is balanced from the finished wines, with the alcohol gently removed by cold filtration, and is Charmat method sparkling wine processed prior to bottling.

VARIETALS
ARIEL Brut Cuvée is 100% Chardonnay with less than half of one percent alcohol. The vineyards and vintages are selected based on their consistency of delicately floral fruit aromas. ARIEL Brut Cuvée retains all the natural and delicate flavor of the grapes by removing the alcohol through our own unique and patented method of cold filtration.

ARIEL Non-Alcoholic Rouge

ARIEL Rouge is fermented and aged in the traditional red wine method: fermentation in stainless steel cooperage on the skins at temperatures above 75° F (24° C) for optimum color extraction and complexity of aromas and tannins. Some of the finished wine is oak aged for additional complexity. Just prior to bottling, the alcohol is gently removed by cold filtration.

VARIETALS
ARIEL Rouge is a blend of Cabernet Sauvignon and Petite Sirah, carefully chosen from California appellation vineyards. Grapes selected show good aroma, balance and adequate tannins for aging.

ARIEL Non-Alcoholic Blanc

The wines used to produce ARIEL Blanc are fermented very cold (40°-45° F, 4°-7° C) in stainless steel cooperage. Some of the fermentations are arrested by chilling the wine to 30° F (-1° C) once the desired alcohol and sugar levels are achieved. Just prior to bottling, the alcohol is gently removed by cold filtration.

VARIETALS
ARIEL Blanc is a premium blend of Sauvignon Blanc and Chardonnay, with less than one half of one- percent alcohol. Vineyards are selected based on their emphasis on floral, aromatic fruit character. ARIEL Blanc retains all the natural and delicate flavor of the grapes by removing the alcohol through our own unique and patented method of cold filtration.

ARIEL Non-Alcoholic White Zinfandel

ARIEL White Zinfandel is made from the red Zinfandel grape. Once harvested, the grapes are crushed and the juice is allowed to ferment at 50° F (10° C) in stainless steel cooperage with the skins until the desired color is extracted. The skins are then removed, and the blush colored must is fermented to dryness. Just prior to bottling the alcohol is gently removed via cold filtration.

WHITE ZINFANDEL
ARIEL White Zinfandel is produced from select California vineyards growing Zinfandel exclusively for White Zinfandel production, with an emphasis on vineyards producing grapes with a strawberry fruit character.

2007 ARIEL Non-Alcoholic Merlot

ARIEL 2007 California Merlot offers all of the benefits of a red wine, with less than half of one- percent alcohol. The grapes were grown in San Luis Obispo county, from vineyards known for superior Merlot production.

ARIEL California Merlot was fermented and aged in the traditional red wine method: fermentation in stainless steel cooperage on the skins at temperatures above 75° F (24° C). After fermentation, the wine was separated from the skins and a portion was moved to small French oak barrels for aging. Just prior to bottling, the alcohol is gently removed by cold filtration.

2008 Cabernet Sauvignon offers all of the benefits of a red wine, with less than half of one - percent alcohol. The grapes were grown in San Luis Obispo county, a region of California known for producing high quality fruit. Our Winemaker searches out Cabernet Sauvignon with a good balance of desirable fruit characteristics and adaquate but not overwhelming tannins.

2009 ARIEL Non-Alcoholic Chardonnay

ARIEL Chardonnay is fermented cold at 50° F (10° C) in both stainless steel cooperage and small French oak barrels to dryness. Once fermentation is completed, the wine is blended and receives additional oak aging. Just prior to bottling, the alcohol is gently removed by cold filtration.

ARIEL 2009 Chardonnay grapes are carefully chosen from a variety of regions in California, with vineyards selected for Chardonnay exhibiting an emphasis on tropical fruit aromas.
