Mixed Green Salad with Strawberry, Feta, Red Onion, and Raspberry Vinaigrette

Ingredients:
- 6 cups mixed greens (such as spinach, arugula, and leaf lettuce), washed and dried
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup thinly sliced red onion
- 1/2 cup fresh raspberries
- 2 Tbsp. raspberry vinegar
- 2 Tbsp. extra virgin olive oil
- 1 tsp. honey
- Salt and pepper to taste
Instructions:
Prepare the Raspberry Vinaigrette
- In a blender or food processor, combine the fresh raspberries, raspberry vinegar, olive oil, honey, salt, and pepper. Blend until smooth and well combined. Taste and adjust the seasoning if necessary. Set aside.
Assemble the Salad
- In a large salad bowl, add the mixed greens.
- Scatter the sliced strawberries, crumbled feta cheese, and thinly sliced red onion over the greens.
- Just before serving, drizzle the raspberry vinaigrette over the salad.
